Teriyaki Pork Meatballs

Ingredients 

For the meatballs 

  • 2 lb ground pork 

  • 4 tbsp yellow onion, minced 

  • 6 garlic cloves, minced 

  • 2 eggs 

  • 1 cup plain panko breadcrumbs 

  • (2 scallions) 

For the sauce 

  • 6 garlic cloves, minced 

  • 0.5 cup soy sauce 

  • 6 tbsp maple syrup 

  • 2 tbsp rice vinegar 

  • 3 tsp cornstarch 

  • (1 tsp ginger) 

Rice 

Instructions 

  1. Wash rice and measure water as per package instructions. 

  1. Preheat the oven to 400 degrees F 

  1. Next, add the pork, onion, garlic, egg, and breadcrumbs to a large bowl. Use a spoon or your hands to mix everything together. Do not overmix. 

  1. Form the pork mixture into meatballs. 

  1. Heat an oven-safe skillet on the stove. Sauté the meatballs for 3-5 minutes or until they’re golden brown on all sides. 

  1. Place the skillet into oven and bake for 15-20 minutes. 

  1. Whisk all the sauce ingredients together in a bowl. 

  1. Take meatballs out of the oven. Place skillet on medium-low heat on the stove then add the sauce and stir. Allow the sauce to thicken and coat the meatballs. 

  1. Serve on rice.
